Don't see your phone, or it shows as unsupported? Some Android phones ship with eSIM disabled even though the hardware is present. Try Settings → Mobile network → Add eSIM, or dial *#06# — if you see an EID number, your device supports eSIM.

iPhone: Settings → General → About → look for an Available eSIM section near the bottom. Android: Settings → Network or Connections → look for 'Add eSIM' or 'Download a SIM'. If you see either, you're good.
Most newer iPhones and Pixels are unlocked from the factory. Older models bought on contract may be locked — check with your home carrier. A locked phone usually still supports eSIM but only for plans from the same carrier.

iPhone 8, 7, and earlier don't have an eSIM chip — no software update can change that. Older Pixels (1, 2) and Samsung pre-S20 are likewise hardware-blocked.
